Dyo Elies Winemaker Notes

The fully ripe 2007 vintage shows in the deep purple colour of “Dyo Elies” and its round mouthful. Aromas are subtle under its moderate acidity, which accentuates the phenolic load without leaving an edgy aftertaste. Spice dominates in the bouquet with hints of black olive, dark chocolate, and coffee. Ready to drink now, but also worth keeping for further ageing.
